Healthy Cookies

Are you craving cookies? I certainly was and due to my healthy obsession with Bulk Barn, I had just picked up oats, buckwheat flour and unsweetened coconut flakes that I could use to make some sweet, healthy treats. I didn’t use a recipe with these cookies, but I took a chance and they turned out awesome. I used 1 cup buckwheat flour, 1 cup oats, 1 tsp baking powder, 1 tsp cornstarch, half cup oil(coconut of whatever you have), 1 egg, ¼ cup almond milk, ¼ cup maple syrup, ½ cup dark chocolate chips, ¼ cup pecans, ¼ unsweetened coconut flakes. The batter was very sticky and a smushed them into little blobs and put them on a greased baking sheet.

Bake at 375 for 15 minutes. Let cool for 5. Eat all of them. Well, maybe not all of them but they’re so good warm! They taste really delicious but they still feel healthy because they kinda are. (In terms of cookies.) You can fart around with the fun ingredients. Feel free to substitute almonds, dried cranberries, yogurt chips etc. to make the cookies your own! If you don’t eat eggs you can mush half a banana or some apple sauce in there.
