Sunday I was the most hungover woman on the planet because I went to my best friend’s bachelorette party the night before. Cooking while hungover is a pain, but cooking for a dinner party hungover?! Yeah, right! We had 3 couples coming over later that night, and I promised them pulled pork. I peeled my body out of bed around 10:30 and immediately started working on the pork. When you’re hungover, a GIANT piece of raw pork shoulder is the last thing your want to look at. I trimmed off the excess fat, covered it in salt, pepper and garlic powder. Put it in your slow cooker, cover with one can of crushed pineapple and let it go on low for 8-10 hours. I cranked up with heat to high for about 2 hours because time wasn’t on my side.
The nice thing about a slow cooker is that you can just set it and forget it. Matt and I went out to grab last minute ingredients while our pork baby got tender and warm.
I made a coleslaw to go with my pulled pork using a pre-shredded bag of cabbage and veg because I was too tired to chop things. I did make my own dressing though. Large blob of mayo, smaller blog greek yogurt, white vinegar, dijon, honey, salt and pepper. Perfection.

Did I mention it was my first time making pulled pork?! How exciting! I also added mesquite liquid smoke and smoked paprika to my bbq sauce. If you’re pressed for time, just use your favourite bbq sauce for the pork. It’ll still be amazing and you’ll get hints of pineapple from earlier. Apparently pineapple has some sot of enzyme that’s really great for tenderizing meat. Even without the sauce, this pork tasted so good.
My guests were in charge of bringing appetizers, sides and dessert. Rob and Ashley started off the night with a bang by bringing the most epic cheese and meat board.
DJ and Jackie brought a yummy Greek and orzo salad and Amanda and Jordan brought an amazing apple pie from Wanda’s Pie in the Sky. My friends are the best. This dinner party was everything I hoped it would be and more. The food was great and the company was even better. AWWWW.
A slow cooker meal is great for entertaining because you can do most of it ahead of time so you can spend time with your guests instead of in the kitchen.
Also, I ate a bowl of pulled pork the next day and it was the greatest day of my life.
