SOY GOOD PORK

What am I making for dinner tonight you ask? Hoisin marinated pork chops and ginger soy grean beans. Sounds good, doesn’t it? OH. IT WAS. You could almost say it was SOY good.

I marinated the boneless pork chops is hoisin sauce, soy sauce, dijon, minced ginger and honey. Just a squirt/dash or two of each. It can marinate for as little as 30 minutes or as long as overnight. I did about 3 hours. Bake in a 400 oven for 15-20 minutes until cooked through. There should be a lot of extra sauce for saucy fun.

Now for the beans. Get ready for the funkiest green beans this side of the Mississippi. Par boil/steam your beans for 2 minutes. Cut in half. In a frying pan slowly melt a generous glob of crunchy peanut butter, big squeeze of sriracha, fresh pressed garlic, few dashes soy sauce, blob of minced ginger. Add a bit of water if it’s too thick. Stir in the slightly cooked beans and cook over med-high heat until the sauce gets thick and coats the beans until tender.

While you’re doing all this, slap some couscous on the stove. I won’t tell you how to make couscous because it’s easy as pie and it tells you how on the package. Arrange everything on the plate and let the couscous suck up all the soy goodness. HELL YEAH. Sliced green onion would have been a deluxe garnish.
