Sweet and Savoury Oatmeal

This week was all about making food in bulk and re-perposing it into new and exciting meals. For example, I made a pot of steel cut oats for breakfast. If you mix 1 cup of dried steel cut oats with 4.5 cups of water it makes enough oats to easily feed 4 people. That means that Matt and I could make 2 meals out of it! I did sweet and savoury versions of these breakfast oats. (I’m not going to tell you how to cook oats, it tells you on the package. Just now that it takes at least 25 minutes! This ain’t no instant crap!)

Sweet:

honey
cinnamon
nuts (I used sunflower seeds and sliced almonds)
dried fruit (I used craisins)
banana
milk

Dress it up however you want it! Maple syrup, brown sugar, soy milk, berries etc. Make it your own.

Savoury:

Take the leftover cold oatmeal and re-warm it in a pan with:

sliced cherry tomatoes
spinach
herbs and spices of your choice (I used my fave steak spice, parsley flakes, salt, pepper and garlic powder)
grated cheese (I used cheddar and parmesan)

and top it off with a sunny side egg and chives. MAMMA MIA WHAT A GOOD BREAKFAST! It reminded me of risotto. So many people think oatmeal is boring (including myself) but these creations really showed me how versatile it can be. It’s a nice option when you’re sick of/can’t eat bread all the time. I highly recommend you make steel cut oats because they’re cheap, healthy, filling and are a great canvas for flavours.
